2023 Cima Cabernet Sauvignon
Cima is Italian for "the peak," and that is the job this wine has. We farm two estate vineyards on Howell Mountain, one on the north face and one on the south, each with its own soils and weather, and every year the very best barrels from both go into Cima. A rush of dark fruit on the nose — blackberry, blueberry, currant — wrapped in vanilla and warm spice, then a textured, chewy middle with a touch of wet stone. It is 100% estate Cabernet Sauvignon, hand-harvested and hand-sorted, aged 20 months in 100% new French oak. Organically farmed, Napa Green, Fish Friendly Farming, B Corp. This is the one for the milestone dinner — filet mignon, beef stroganoff, a mushroom tart, or the best burger you can build.
