2023 Cold Springs Cabernet Sauvignon
Our Cold Springs Vineyard is 5.5 acres on the south side of Howell Mountain at 1,660 feet, tucked into tall evergreens. The soil is decomposed volcanic ash — tuff — which drains fast and offers the vines almost nothing, so they root deep, stay low in vigor, and make small berries of real quality. You taste all of that: fruit-forward aromatics with floral and earthy tones, blackberry, violets, and cedar, then a big, structured palate with long-lasting tannins and a fruit-filled finish. Hand-harvested in the cool morning hours, hand-sorted before and after the de-stemmer, and aged 20 months in 90% new French oak, with the winemaker pulling the best barrels for this single-vineyard bottling.
