2021 Cold Springs Cabernet Sauvignon
Tucked into the tall evergreens of Howell Mountain at 1,660 feet, our organically farmed Cold Springs Vineyard gives us a Cabernet Sauvignon of extraordinary brightness and concentration — the kind of wine that sings from the very first sip. Bright red raspberry, sweet blackberry pie, and nostalgic blueberry preserves leap from the glass, backed by a creamy, focused palate, great acidity, and big, broad, savory tannins. Aged 20 months in 90% new French oak. It will keep developing for years, but there is no reason to wait for permission. Pairs with empanadas and Peking duck.
