Roasted Pork Loin with Meyer Lemon and Rosemary

Ingredients

  • 1 boneless pork loin roast (3-4 lbs)
  • Salt and black pepper for seasoning
  • Neutral high temp cooking oil, as needed (such as grapeseed or avocado oil)

Season pork loin generously on all sides and let sit at room temperature for 30 minutes prior to cooking. Preheat oven to 300 degrees.


In a cast iron skillet, sear evenly on all sides until golden brown and remove from heat. Transfer pork to roasting pan with a rack. Use a pastry brush to glaze with Meyer Lemon and Rosemary Glaze until generously coated. Place the roasting pan of pork into the 300 degree oven and cook until internal temperature reaches 145 degrees. Glaze with remaining glaze every 10 minutes until fully cooked.


Rest for 10 minutes before carving.

In a small saucepan, bring mixture to a simmer over low heat, remove and set aside.
