Plum & Pistachio Bruschetta

Yield: 4 servings  

INGREDIENTS: 
Plum Agrodolce:
1 jar Clif Family Organic Plum Jam
½ cup golden Balsamic vinegar
½ tsp salt
¼ cup Clif Family Organic Extra Virgin Olive Oil

Use a blender to puree and emulsify all ingredients.  

Whipped Ricotta:
2 cups whole milk ricotta such as Bellwether Farms Jersey
1 tsp salt
½ tsp black pepper
2 Tbsp finely grated Parmesan cheese
¼ cup Clif Family Organic Extra Virgin Olive Oil

Whisk together or use a stand mixer and mix until emulsified and slightly fluffy.  

Bruschetta:
Whipped ricotta (see above)
Plum agrodolce (see above)
Fresh plums, about 4-6, pits removed and sliced into ½” wedges
Pistachios, shelled, lightly toasted and roughly chopped  

DIRECTIONS:

Grill 4 pieces of good sourdough on both sides and brush lightly with olive oil. Spread a thick layer of whipped ricotta on each. Roughly arrange the plum wedges on each piece of toast. Drizzle the agrodolce over top and finish with a sprinkling of chopped pistachios. Slice each bruschetta into 4-6 manageable pieces.
