Here is the thing nobody tells you about entertaining: the food does not have to be impressive. It has to be ready.
The best nights at our house start the same way. Someone texts “we’re close,” and there are eleven minutes before the door opens. Nobody is making appetizers in eleven minutes. What happens instead is a cutting board, a jar of something, a knife, and a bottle already open on the counter. Mismatched glasses. Somebody’s kid eating all the prosciutto straight off the board. That’s the table people remember — not the one that took two days.
So, when we put together The Napa Table Trio — a white, a rosé, and a red, all farmed organically in our Napa Valley vineyards — we did not build it for a tasting flight. We built it for the table. Three bottles, three completely different moods, all of them made to open tonight with whatever you’ve got.
It’s new for fall, and it’s the first time these three have shipped together. All three made by our winemaker, Laura Barrett, to be opened young — no cellaring, no decanting, no occasion required.

Below is our cheat sheet: the snacks we actually make, sorted by which bottle they go with. Most of them are assembly, not cooking. A few are worth the extra ten minutes, and we’ve linked full recipes for those.
However you pour it, there’s no wrong answer.
2025 Unoaked Chardonnay
For the part of the night when someone opens the fridge and starts pulling things out.
No oak, no butter — just crisp bright fruit and citrus. This is the most useful bottle in the trio, because it goes with cheese, it goes with tinned fish, it goes with chips, and it goes with dinner. If you only remember one pairing rule from this whole post: unoaked Chardonnay loves salt.
Warm Mt. Tam with Peach Jam & Basil
Cowgirl Creamery Mt. Tam — that triple-cream that behaves like a dip once it warms up — with a spoonful of our Organic Peach Jam and torn basil, or our Organic Peach Habanero Jam if your crowd likes a little heat. Warm it briefly, put grilled bread or a torn epi loaf next to it, let people go in with their hands. Serve warm. That’s the only instruction that matters.
Tinned Fish on a Cracker, Three Ingredients Deep
Cream cheese on a sturdy cracker, a piece of Fishwife smoked salmon, a small dab of our Organic Meyer Lemon Marmalade, and something green — dill, chives, a caper, whatever’s alive in your fridge. The marmalade is the trick. It cuts the richness and makes people think you planned it.
(No Fishwife nearby? The Trader Joe’s smoked trout does the job. We’re not precious about it.)
Crusty Bread & Olive Oil with White Wine Somm Seasoning
Pour good olive oil in a shallow bowl, shower it with our White Wine Somm Seasoning, tear bread. Thirty seconds. Zero cooking. Somehow always the first thing gone.
The Fifteen-Minute Cheese Board
Brie, our White Wine Jelly, a jar of our nut mix, sliced apples, and cackers. Add Point Reyes Toma if you want a second cheese with a different personality. Boards don’t need to be symmetrical. Ours never are.
Charcuterie Chips
Our favorite hack of the season, and a twist on the trend. Kettle chips, a dollop of crème fraîche or sour cream, a small spoon of our Organic Savory Onion Jam, a pinch of crispy fried onions, and chopped chives. Salt, tang, sweet, crunch, crunch again. Assemble right before serving so the chips stay loud.
Honey-Drizzled Stuffed Dates
Medjool dates stuffed with Cypress Grove goat cheese mixed with our White Wine Somm Seasoning, rolled in chopped Organic Rosemary Almonds & Pistachios, baked until just soft, drizzled with honey. Ten minutes of hands-on work, and worth every second.
Smoked Trout Dip with White Wine Somm Seasoning
Smoked whitefish or trout folded into cream cheese and crème fraîche with lemon and our White Wine Somm Seasoning. Make it in the morning, pull it out at six.
2025 Rosé of Grenache
For the golden-hour, still-warm-out, everyone-standing-in-the-kitchen part of the night.
Our Rosé of Grenache is dry, bright, and has a little bit of stone fruit which means it likes anything with fruit, anything with fresh herbs, and anything with soft cheese. Basically, it likes warm weather refusing to end.
Cantaloupe, Prosciutto, Rosé Jelly & Mint on a Toothpick
Wrap a cube of melon in half a slice of prosciutto, dot it with our Rosé Wine Jelly, tuck a mint leaf under the ribbon, spear it. Make twelve in five minutes. They disappear in three.
Cucumber Rounds with Chèvre, Rosé Jelly & Chopped Rosemary Almonds
Thick-cut cucumber coins, a smear of Cypress Grove chèvre, a small spoon of Rosé Wine Jelly, and a sprinkle of our Organic Rosemary Almonds & Pistachios, roughly chopped. Cool, creamy, sweet, crunchy — four things happening on something you didn’t have to turn the oven on for.
Strawberry Balsamic Crostini with Goat Cheese & Basil
Sliced strawberries tossed with a splash of good balsamic while you toast the bread. Cypress Grove goat cheese on the toast, berries on top, torn basil, flaky salt. If the strawberries are past their best, this is actually better — the balsamic rescues them.
Pluot Lavender & Whipped Ricotta Toasts
Whip ricotta with a fork and a pinch of salt for thirty seconds until it loosens up. Spread on grilled bread, spoon on our Organic Pluot Lavender Jam, finish with olive oil and cracked pepper. The lavender and the rosé do something quietly great together.
Watermelon, Feta & Mint with White Wine Somm Seasoning
Cubed watermelon, crumbled feta, torn mint, olive oil, and a shower of our White Wine Somm Seasoning. Make it in the bowl you’re serving it in. It gets better as it sits, which is not true of most things on this list.
Radishes, Good Butter & Flaky Salt
Halved radishes, cold salted butter, flaky salt, bread if you want it. This is barely a recipe and it’s on the table at every dinner we steal ideas from. Buy the good butter — it’s the whole thing.
Wasabi Ginger Cheese Ball with Tamari Glazed Mixed Nuts
This one is our showstopper-that-looks-harder-than-it-is, and it deserves its own page. A cream-cheese base with wasabi, rolled in crushed Organic Tamari Glazed Mixed Nuts. Make it the day before. Serve it with crackers and watch it become the thing everyone asks about.
2022 Vino Del Pranzo Cabernet Sauvignon
For when the sun goes down, temps cool down and you’re ready to settle in for the evening.
Vino del Pranzo means “lunch wine” — the bottle that lives on the Italian table next to whatever’s cooking, from a slow lunch through aperitivo and on into dinner. Ours is a Napa Cab that never got the memo about being serious. It wants salt, fat and smoke.
The October Charcuterie Board
Salumi, our Red Wine Jelly with Cracked Pepper, cornichons or any sharp pickled thing, and cheese — this month, Point Reyes Farmstead Original Blue against the red wine jelly is a genuinely great five seconds of eating.
Roasted Olives with Red Wine Somm Seasoning
Mixed olives, olive oil, a strip of orange peel, our Red Wine Somm Seasoning, twenty minutes in a hot oven. They come out warm and glossy and taste like a restaurant. Put out a bowl for the pits.
Baked Brie with Savory Onion Jam
Brie in a small dish, our Organic Savory Onion Jam spooned over the top, baked until it slumps. Crackers, bread, apple slices. Nobody has ever been disappointed by this.
White Bean Smash with Olive Oil & Herbs
Cannellini beans smashed with garlic, lemon, olive oil, and herbs, piled into a bowl with Rustic Bakery crackers or crostini for dipping. Simple enough to improvise, but we’re giving it a proper recipe, so the ratios come out right every time.
Roast Beef & Red Wine Jelly Sliders
Hawaiian rolls, roast beef or salumi, white cheddar, our Red Wine Jelly with Cracked Pepper, and horseradish mayo. Baked as a tray, cut into squares. This is the one that turns a snack table into dinner.
Grilled Bratwurst Skewers with Whole Grain Mustard
Our Oktoberfest answer. Grilled brats cut into coins, skewered with something pickled, whole grain mustard for dipping. Cab and bratwurst is not a pairing anyone writes about, which is exactly why you should try it.
Napa Noir S’more Bites
Graham cracker squares, a square of our Napa Noir Organic Dark Chocolate Bar by TCHO chocolate, a torched marshmallow, second cracker on top. Dark chocolate and Cabernet is an old trick that still works.
