Meyer Lemon Granola Bar

INGREDIENTS:
920g rolled oats (toasted at 350 for 15-20 minutes)
200g pepitas
226g Clif Family
Organic Meyer Lemon Marmalade
226g
Clif Family Solar Grown™ Raw Honey
224g coconut oil
180g brown sugar
4 tsp vanilla
1 tsp salt
400g golden raisins
200g white chocolate chips
200g sunflower seeds (toasted)
1 Tbsp Meyer lemon zest
Maldon salt, as needed
DIRECTIONS:
Preheat your oven to 350°F and toast the rolled oats and sunflower seeds for 15-20 minutes until golden and fragrant. Set aside.
In a pot over medium heat, combine the Solar Grown™ Raw Honey, coconut oil, brown sugar, vanilla, salt, and Meyer lemon zest. Stir until everything is melted and well combined.
Pour the warm mixture over the toasted oats and seeds, stirring to coat evenly. Let it cool slightly before adding the golden raisins.
Allow the mixture to cool a bit more, then gently fold in the white chocolate chips.
Press the mixture firmly into a parchment-lined half-sheet tray, ensuring an even layer. Sprinkle Maldon salt on top for a perfect sweet-salty balance.
Let the bars cool completely, then flip the tray onto a cutting board and peel off the parchment. Use a sharp knife to slice them into your desired size. Enjoy!
