Herbed Goat Cheese Crostini with Clif Family White Wine Jelly
Recipe by the Clif Family Culinary Team Yield: 40-60 Crostini (depending on the size of baguette)
INGREDIENTS:
1 sourdough baguette, sliced into ¼” pieces on a slight diagonal bias ¼ cup Extra Virgin Olive Oil Salt to taste
8 oz softened goat cheese, such as Laura Chenel 2 Tbsp finely chopped chives 1 Tbsp finely chopped dill 4 Tbsp finely chopped Italian flatleaf parsley Juice of half a lemon 2 tsp salt ½ jar of Clif Family White Wine Jelly
DIRECTIONS:
Preheat oven to 300°F.
In a mixing bowl, toss sliced baguette with olive oil and salt to taste. Lay the slices evenly spread on a parchment-lined sheet tray.
Bake in the oven until lightly golden brown and crunchy (about 30 minutes). Allow to cool.
In a mixing bowl or stand mixer, combine goat cheese, chopped herbs, lemon juice, and salt. Mix until smooth and well combined.
Spread about half a tablespoon of herbed goat cheese on each crostino and top with about a teaspoon of Clif Family White Wine Jelly.
