Goat Cheese and Red Wine Jelly Stuffed Figs

Recipe from the Clif Family Kitchen

INGREDIENTS:
24 fresh figs
1.5 cups soft goat cheese (chevre)
1 tsp black pepper
1.5 tsp salt
Clif Family Extra Virgin Olive Oil, as needed
1 jar Clif Family Red Wine Jelly

DIRECTIONS:
Preheat oven broiler to high. Trim tips and bottoms of figs so they sit flat. Score an "X" into each fig about 1/3 of the way through. Lay on a sheet tray lined with a Silpat or lightly greased parchment paper.

Mix goat cheese with black pepper and salt and fill into a piping bag. Pipe about 2 tsp of goat cheese into each fig.

Drizzle figs lightly over top with Clif Family Extra Virgin Olive Oil.

Place figs under broiler for about 3-4 minutes to lightly caramelize the figs and goat cheese.

Top each fig with a small dollop of Clif Family Red Wine Jelly and serve.
