Recipe
Ingredients
- 1 lb lamb leg or loin, cut into 1.5” pieces
- 10-12 bamboo skewers, soaked in water overnight
Marinade
- 2 Tbsp Kecap Manis (Indonesian sweet soy sauce)
- 1 small shallot, minced
- 2 cloves garlic, minced
- 1 stalk lemongrass, just the tender white part finely minced
- Zest of 1 lime
- 3 Tbsp peanut oil
Satay Sauce
- 1 Tbsp peanut oil
- 1 shallot, finely minced
- 2 cloves garlic, finely minced
- 1 Tbsp Sambal Oelek chili paste
- cup Big Spoon Roasters Bourbon Pecan peanut butter
- 1 cup coconut milk
- 2 Tbsp Kecap Manis
- 1 Tbsp fish sauce
- Juice of 1 lime
Instructions
Marinade
- Stir all marinade ingredients in a bowl to combine.
- Coat the lamb pieces thoroughly and allow them to marinate for at least 2 hours prior to cooking.
Satay Sauce
- Whisk all satay sauce ingredients together until homogenous.
Skewers
- Skewer the marinated lamb, placing 4–5 pieces per skewer.
- On an outdoor grill or in a cast iron pan with good ventilation, grill the lamb over high heat.
- Grill the lamb until it is well caramelized and the desired internal temperature is reached (– for medium rare).
- Serve the skewers immediately with the satay sauce for dipping.
