Blueberry Jam Filled Gougères

1 cup water 1 cup whole milk 8 oz unsalted butter 1 tsp salt 2 cups all-purpose flour 8 eggs 1 tsp black pepper, (optional) 12 oz shredded Gruyere cheese, (optional) 4 oz grated parmesan cheese, (optional) Egg Wash 1 egg, whisked 1 tsp water Filling 1 jar Clif Family Organic Blueberry JamDIRECTIONS:
Prepare the Dough
Preheat the oven to 425°F with convection.
In a medium saucepan, combine the water, milk, butter, and salt. Bring to a boil. Once the butter melts, remove the pan from the heat and add all the flour at once. Stir vigorously until the mixture is smooth and lump-free, resembling mashed potatoes.
Return the pan to the stove over medium-low heat. Stir constantly while cooking for 3-5 minutes, until the dough dries slightly and leaves a thin film on the bottom of the pot.
Incorporate the Eggs and Cheese
Transfer the dough to a stand mixer fitted with a paddle attachment. Beat on medium speed until it cools slightly. The bowl should be warm but not hot to the touch.
Add the eggs one at a time, ensuring each is fully incorporated before adding the next. The final dough should be smooth and creamy. If using cheese and black pepper, mix them in at this stage.
Pipe and Bake
Load the dough into a piping bag. On a parchment-lined baking sheet, pipe golf ball-sized mounds, leaving about 2 inches between each. Brush with egg wash and sprinkle with extra Parmesan, if desired.
Bake for 5 minutes at 425°F, then reduce the temperature to 325°F. Continue baking for 20 minutes, rotating the pans every 10 minutes for even cooking. The gougères should be puffed and golden brown.
Fill with Blueberry Jam
Let the gougères cool for 5 minutes, then transfer them to a wire rack. Using a skewer or the tip of a paring knife, poke a small hole into the underside of each.
Fill a pastry bag with Clif Family Organic Blueberry Jam and snip off the tip. Pipe about 1 teaspoon of jam into each gougère, being careful not to overfill.
