Meyer Lemon Whipped Ricotta Cannoli

INGREDIENTS:
For the Meyer Lemon Ricotta Filling:
2 cups Whole Milk Ricotta
¼ cup
Clif Family Organic Meyer Lemon Marmalade
2 Tbsp confectioner’s sugar
½ tsp vanilla extract
½ tsp salt
For the Cannoli Shells:
1 ¾ cups all-purpose flour
1 Tbsp granulated sugar
½ tsp salt
¼ tsp cinnamon
2 Tbsp unsalted butter, cut into small pieces
1 egg yolk
½ cup Marsala wine (or dry white wine)
1 egg white (for sealing)
Vegetable oil, for frying
DIRECTIONS:
Make the Meyer Lemon Ricotta Filling:
In a stand mixer, combine ricotta, Meyer Lemon Marmalade, confectioner’s sugar, vanilla extract, and salt.
Using the paddle attachment, whip at medium speed until smooth and homogenous.
Transfer to a piping bag and refrigerate for at least 30 minutes.
Make the Cannoli Shells:
In a large bowl, whisk together flour, sugar, salt, and cinnamon.
Cut in butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
Add egg yolk and Marsala wine, mixing until a dough forms. Knead for about 5 minutes until smooth.
Wrap in plastic wrap and let rest for 30 minutes.
Roll out the dough to about 1/8-inch thickness and cut into circles (about 4 inches in diameter).
Wrap each dough circle around a metal cannoli tube, sealing the edge with egg white.
Heat oil in a deep pot to 375°F and fry shells in batches until golden brown. Drain on paper towels and cool before removing from molds.
Assemble the Cannoli:
Pipe the Meyer Lemon Ricotta Filling into both ends of each cooled shell.
Dust with powdered sugar and garnish with lemon zest or crushed pistachios, if desired.
Serve immediately and enjoy!
