Cabernet Dark Chocolate Pretzel Blondie Bars
Recipe by the Clif Family Culinary Team
INGREDIENTS:
8 tablespoons (4 ounces) unsalted butter
3/4 cup light or dark brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon fine sea salt
1/4 teaspoon baking powder
1 cup (130 grams) all-purpose flour
2.5 ounces Clif Family Napa Noir Chocolate Bar, broken into small pieces
1/2 cup thin-style salted pretzel sticks, lightly broken
DIRECTIONS:
Preheat your oven to 350°F. Grease an 8×8-inch baking pan.
In the microwave, melt the butter until only a few small chunks remain in the bottom of a large bowl. Stir to melt the remaining butter, this ensures the butter doesn’t get too hot to work with. Add sugar to the melted butter and whisk to combine. Mix in the egg and vanilla extract.
Add the dry ingredients to a separate bowl and gently run a knife through the dry ingredients to mix. Transfer the dry ingredients to the egg mixture and stir just until incorporated.
Sprinkle in half of the broken pieces of Napa Noir Chocolate Bar and broken pretzel pieces and gently fold them in. Spread the batter in the prepared baking pan, smoothing the top.
Scatter the remaining chocolate and pretzel pieces on top of the batter in the pan, using fingers to gently press them into the batter so that they stick.
Bake for 20 to 25 minutes, until deeply golden at edges. Let cool in the pan completely on a wire rack. Once cooled remove from pan cut into small squares and enjoy!
