Brie En Croute with Apple Butter

INGREDIENTS:
8 oz. small wheel of brie cheese
1 Tbsp. Dijon mustard
*optional – sliced ham 2-3 pieces
1 puff pastry dough sheet
1 egg
1 Tbsp. whole milk
1 jar
Clif Family Organic Apple Butter
1 Baguette, sliced or crackers of choice
DIRECTIONS:
Preheat your oven to 400F.
Thaw a sheet of puff pastry so that it is pliable. Crack the egg and milk into a small bowl and beat together, set aside.
Lightly flour the surface of a counter and roll out puff pastry so that it is uniform. Cut the puff pastry dough into a square 8” by 8” or slightly larger so that you have enough pastry to wrap the brie. Place the whole wheel of brie directly in the center of the puff pastry. Brush the Dijon mustard to coat only the top of the brie. If using sliced ham, place all slices directly on the top of the mustard and over the center of the brie.
Using a pastry brush, brush the exposed puff pastry with the egg/milk wash. Begin to pull one corner of puff pastry to the center of the brie and repeat this process until all puff pastry is crimped and folded over the brie. Make sure the last fold is secured with additional egg wash to ensure no cheese or moisture escapes in the cooking process.
Using the tip of a small knife, carefully score the top of the wrapped brie being careful not to slice through the layer of puff pastry. Once you have scored or cut notches onto the top of the brie to reflect a pattern, transfer the brie onto a baking tray with parchment paper. Brush the whole pastry with the egg wash mixture, ensuring coverage on the top and sides.
Transfer to the oven and bake for 35-40 minutes until the pastry has taken on a golden brown color. Remove the brie from the oven and let cool for 15 minutes before serving.
Transfer to a serving platter and serve with slices of baguette or crackers and a dollop of Clif Family Organic Apple Butter.
