Blistered Shishito Peppers with Somm Seasoning for Rosé Wines and Creamy Cilantro-Lime Sauce

Recipe from the Clif Family Culinary Team   INGREDIENTS: 2 pints Shishito peppers High smoke point cooking oil (grapeseed, peanut, coconut, avocado or canola) Clif Family Somm Seasoning for Rosé Wines Lime Creamy Cilantro-Lime Sauce ½ cup mayonnaise ½ cup sour cream 1 lime, zested and juiced ½ cup finely chopped cilantro Salt to taste   DIRECTIONS: In a small mixing bowl, combine creamy cilantro-lime ingredients and adjust seasoning to taste. Keep refrigerated until ready to serve. Preheat a cast iron skillet to the highest setting. Once the skillet starts to lightly smoke, add peppers and a drizzle of cooking oil and toss to coat. Let sit and allow to lightly char and blister. Shake the pan to toss the peppers around. Transfer to a mixing bowl, and while still hot, drizzle a little lime juice on them and liberally season with Clif Family Somm Seasoning for Rosé Wines. Transfer to a serving dish. Serve with creamy cilantro-lime sauce and a chilled glass of Rosé.   SUGGESTED WINE PAIRING: Clif Family Rosé of Grenache
