For this recipe, we've carefully crafted a homemade Blackberry Lemon Thyme Quick Shrub—a unique and foundational ingredient that adds incredible depth to the beverage.

What is a Shrub Drink?

A shrub is a slightly tangy syrup made by combining vinegar, fruit, sweeteners, and herbs. In the world of mixology and culinary traditions, these vinegar-based syrups have a long and rich history. Dating back centuries, shrubs were used as a clever way to preserve the fresh flavors of fruit and add a tangy twist to beverages. Originally concocted as a method for extending the shelf life of fruits, shrubs have evolved into beloved flavor enhancers that lend a distinctive and delicious touch to modern mocktails, cocktails, and spritzers.

The Secret Ingredient: Our Blackberry Thyme Shrub

In our quick shrub recipe, we blend tangy vinegar with juicy Clif Family Organic Blackberry Preserves, sweet Clif Family Solar Grown™ Raw Honey, and a touch of fragrant lemon thyme. The result is a burst of complex, mouthwatering flavors—sweet, tart, and herbaceous—that will leave you wanting more. Enjoy this refreshing, guilt-free indulgence whether you're hosting a gathering or simply taking a moment for yourself. This is the best mocktail recipe for showcasing fresh, seasonal ingredients!

DIRECTIONS:

Step 1: Making the Blackberry Thyme Shrub

  1. In a resealable container, thoroughly mix together the vinegar, blackberry preserves, and raw honey.
  2. Add in the lemon thyme and water and stir to incorporate.
  3. Refrigerate covered a minimum of overnight before using to allow all the delicious flavors to meld together.
  4. Remove and discard the thyme sprigs.
  5. Using a fine mesh sieve, strain out the remaining solids and discard.
  6. Save the shrub syrup in an airtight container and store in the refrigerator.

Pro Tip: While this homemade shrub is great for non-alcoholic drinks and cocktails, it also makes a delicious, tangy salad dressing when added to olive oil!

Step 2: Mixing the Blackberry Fizz Mocktail

  1. Fill a highball or Collins glass 2/3 full of ice.
  2. Add the chilled blackberry thyme shrub, pineapple juice, and fresh lemon juice.
  3. Using a bartender’s spoon, give the mixture a thorough stir.
  4. Top generously with ginger ale (for a sweeter flavor) or ginger beer (for a spicier kick).
  5. Garnish with fresh thyme or rosemary sprigs and a lemon twist for an elegant finish.

Enjoy this easy, flavorful, and unique non-alcoholic beverage!
