Olive oil, as needed 4 large russet potatoes, washed 1 package (4oz) Clif Family Organic Barbeque Walnuts & Almonds, roughly chopped ½ cup sour cream 2 Tbsp BBQ sauce 1 cup grated sharp cheddar 4 green onions, finely sliced ¼ stick of butter, melted 1 tsp apple cider vinegar Salt and pepper to tasteDIRECTIONS:
Preheat the oven to 400°F. Place washed potatoes on a baking sheet. Rub them with olive oil and salt. Bake for 1 hour or until soft and fluffy. Slice each potato in half lengthwise. Carefully scoop out the flesh into a bowl, keeping the skins intact. Add half of the chopped BBQ Walnuts & Almonds, sour cream, BBQ sauce, cheddar, melted butter, green onions, apple cider vinegar, salt, and pepper.
