Bacon Wrapped Figs with Goat Cheese & Hot Honey

Bacon Wrapped Figs with Goat Cheese & Hot Honey

Recipe from the Clif Family Culinary Team Yield: 4-6 servings INGREDIENTS: 20 dried black mission figs, rehydrated in hot water 10 strips of bacon, cut in half Goat Cheese Mixture ½ cup Chevre goat cheese 1 Tbsp Clif Family Organic Estate Extra Virgin Olive Oil ½ tsp chili flakes Juice of ½ a lemon ½ tsp garlic powder ½ tsp onion powder 2 tsp salt Finish Clif Family Solar Grown™ Hot Honey, as desired 20+ wooden toothpicks   DIRECTIONS: Preheat oven to 375 degrees F. Using a paring knife, remove the stems off each of the figs and cut a slit down the length of each fig. Place figs in a heat-resistant bowl or pot. Bring about 1 qt of water to a boil, and pour over the figs. Let the figs hydrate for about 10 minutes and drain. In a separate mixing bowl, combine the ingredients for the goat cheese mixture and fold together using a spatula until fully incorporated. Fill each fig with about a teaspoon of the goat cheese mixture and wrap securely with ½ a strip of bacon. Place a toothpick through to secure the bacon to the fig. Place on a parchment-lined sheet tray and bake for 15-20 minutes or until the bacon is crispy. Drizzle Clif Family Solar Grown Hot Honey over the figs as desired.   SUGGESTED WINE PAIRING: Clif Family Sonoma Valley Grenache
