Caramelized Onion Palmiers

Recipe by the Clif Family Culinary Team   INGREDIENTS: 1 sheet puffed pastry, thawed 1/2 cup Clif Family Organic Savory Onion Jam Turbinado Sugar (coarse grain brown sugar) Flake sea salt   DIRECTIONS: Preheat oven to 375F. Cut the 9x9 inch square puff pastry sheet in half. Work with each half sheet laid in front of you as a horizontal rectangle.  Spoon about 4 tablespoons of onion jam onto the bottom 1/3 of each rectangle.  Starting at the long end, roll the pastry to form logs and return to freezer for 5-10 minutes (or refrigerate for about 20 minutes) for ease in cutting. Note: At this point, you can wrap the logs well and freeze them for future use. Just make sure to partially thaw before slicing and baking. Pour a small amount of the Turbinado sugar into a small dish. Slice the chilled log into about 20 half-inch circles, using your fingers to press back into a round shape as needed. Lightly pip each slice into the sugar on both sides before placing it on a parchment-lined baking sheet a couple of inches apart. Bake for 10-15 minutes or until the bottoms are golden brown. Flip each pastry round over, and lightly sprinkle with a few specks of flake sea salt. Return to oven for another 5-10 minutes, until evenly golden brown on both top and bottom. Enjoy warm or room temperature.   SUGGESTED WINE PAIRINGS:                     Clif Family Kit's Killer Cab                          Clif Family Gary's Improv Zinfandel
