Honey Baklava

Honey Baklava with Clif Family Solar Grown Honey

Recipe by the Clif Family Culinary Team Serves 6-8   INGREDIENTS: 1 lb phyllo pastry (thawed and cut to the size of your baking sheet) 4 cups finely chopped pistachios (or preferred nut of choice) 1 tsp cinnamon 2 cups melted butter 2 jars Clif Family Solar Grown™ Raw Honey ½ cup water 1 Tbsp lemon juice 1 Tbsp vanilla extract ½ tsp rose water (optional)   DIRECTIONS: Preheat oven to 325°F. Toss finely chopped pistachios and cinnamon together in a small bowl, set aside. Melt butter in a small microwavable dish and set aside. Open phyllo dough and cut to the size of the baking sheet or pan. Cover with a damp towel. While building the baklava layers, be sure to keep the unused phyllo covered with the damp towel to avoid drying out. Start assembling the baklava on the baking sheet by laying down a sheet of phyllo and then using a pastry brush, lightly drizzle/paint on melted butter. Repeat 10 times. Sprinkle a layer of the cinnamon seasoned pistachios (about ¾ cup) and drizzle some butter over it. Repeat another 5 layers of buttered phyllo and then do another layer of the cinnamon pistachios. Repeat this process every 5 layers of buttered phyllo until the whole package of phyllo has been used (around 100 layers total). Baste the top with the remaining butter. Using a pizza wheel or sharp paring knife, cut 1 ½”- 2” diagonal strips in the pastry being sure to cut all the way though to the base of the pan leaving a crosshatched/ diamond pattern in the finished product. Bake for 1 hour and 15 minutes (or until the surface is golden brown). In a small saucepan bring honey, water, lemon juice, vanilla extract and rose water to a boil. Drizzle the hot mixture over the baklava as soon as it comes out of the oven. Allow to cool on the countertop, uncovered until room temperature (4-6 hours to overnight). Pair with a chilled glass of Clif Family Napa Valley Unoaked Chardonnay.
