Broccoli, Bacon and BBQ Walnut & Almond Salad

We love to share good recipes highlighting our Clif Family Napa Valley ingredients.  This recipe from Kay @vineyardkitchen is a delicious way to eat raw broccoli.  The broccoli soaks up the creamy dressing, softening it but remaining crisp.  The addition of bits of salty bacon, tangy cheddar cheese and our Barbequed Walnuts & Almonds gives it plenty of delicious flavor.

Ingredients:
1/4 cup red onion, diced
1 TBSP white wine vinegar
1/4 teaspoon sea salt
6 cups broccoli florets, cut into bite-size pieces
1/2 cup mayonnaise
1/4 teaspoon ground black pepper
3 oz sharp cheddar cheese, grated (can use a mix of yellow and white cheddars)
2 slices bacon
1/2 cup Clif Family Barbecued Walnuts and Almonds

Method:
Add the diced red onion to a large salad bowl. Pour the vinegar and sprinkle salt over the onions and allow to marinate 10 -15 minutes to mellow the onion flavors while chopping broccoli into bite size pieces. To the marinated onions, add the mayonnaise and black pepper whisking until smooth. Add the chopped broccoli and cheddar cheese into the dressing mixture and toss to coat. Cover and refrigerate until ready to serve. (Can be made up to this point several hours ahead of time.) Right before serving, cook the bacon until crisp. Drain on paper towels, then crumble into small pieces over the salad. Add the nuts and toss well. Taste and adjust seasoning if necessary. Serve cold or room temperature.
