Meyer Lemon Vinaigrette

Recipe by Executive Chef John McConnell

1 Tbsp Clif Family Kitchen White Wine Vinegar
1 Tbsp lemon juice, freshly squeezed
1 shallot, finely minced
1 tsp Dijon mustard
1 heaping Tbsp Clif Family Kitchen Meyer Lemon Marmalade
Sea salt and freshly milled black pepper
¼ cup Clif Family Kitchen Extra Virgin Olive Oil

Combine the vinegar, lemon juice, shallot, mustard, marmalade and ¼ teaspoon sea salt in a small bowl. Let stand 15 minutes, then whisk in the oil and season with a little pepper to taste. Taste and correct the balance, adding more oil or vinegar if needed.
